High Protein Pancakes

For Valentine's Day this morning I made my Valentine these delicious AND nutritious pancakes!

High Protein Pancakes
Adapted from Doug Kaufman's Phase 1 cookbook

1 cup of Coconut Milk
2 eggs
2 TBS melted and cooled coconut oil*
2 TBS of maple syrup OR 3 packets of stevia OR 2 droppers full of liquid stevia (thats what I used)**
3/4 cup almond flour
1/4 cup flaxseed meal
2 TBS of tapioca starch OR arrowroot powder
1 TBS buckwheat flour
1/4 tsp salt
3 tsp baking powder
fresh fruit (optional)
chocolate chips (optional)

In a large bowl whisk together the wet ingredients.
Add the dry ingredients and mix well.
Heat up a skillet over medium heat and pour 1/4 cup of batter into pan.
If you are adding fruit or chocolate chips do it now
Flip after 2 - 3 minutes or when edges start to brown.
Cook for another 2-3 minutes and serve!


*Note - If doubling, do 1 and 1/2 instead of 2 times of coconut or pancakes will be too greasy.
**Note - Sweetness of stevia can change dramatically depending on the brand used, start with a little and taste as you go!
